Ingredients

  • 1 lb bamboo shoots (cooked, sliced)
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp vegetable oil
  • 2 stalks green onions, sliced
  • 1 cup water

Instructions

    Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 1 lb sliced bamboo shoots and cook, stirring occasionally, until lightly browned, about 3 minutes.

    Stir in 3 tbsp soy sauce, 1 tbsp sugar, and 1 cup water. Bring to a boil, then reduce heat to low and simmer, uncovered, until the liquid reduces by half and the shoots are glossy, about 10 minutes.

    Increase heat to high and cook, stirring constantly, until the sauce thickens and coats the shoots, about 2 minutes. The shoots should look shiny and the sauce should cling to them.

    Remove from heat and stir in 2 sliced green onions. Serve hot or at room temperature.
