Ingredients
- 2 pieces boerewors sausages
- 2 pieces soft white bread rolls
- ½ medium yellow onion
- 2 tbsp hot sauce or peri-peri sauce
- 1 tbsp whole grain mustard
- 2 tbsp fresh cilantro or parsley, chopped
- 1 tbsp olive oil

Slice the onion into thin rings. Heat oil in a skillet over medium-high until shimmering.

Cook onion rings, stirring occasionally, until edges darken and char, about 6 minutes. Transfer to a plate.

Add boerewors to the same skillet. Sear 2 minutes per side without moving until charred and cooked through.

Toast rolls face-down in the skillet for 90 seconds until golden and crispy.

Spread mustard on one roll half, hot sauce on the other. Layer each sausage, charred onions, and fresh herbs.
