Ingredients
- 2 steaks (6–8 oz each) beef tenderloin or sirloin steaks (1.5 inches thick)
- 8 oz frozen french fries
- 2 large eggs
- 2 cups mixed salad greens
- ½ lime lime (juiced)
- 2 tbsp chili sauce or sriracha

Start fries in the oven per package directions (usually 400°F, 12-15 min).

Pat beef steaks dry. Season aggressively with salt and pepper on both sides.

Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

Sear steaks 90 seconds per side without moving. Edges should look caramelized and the center stays rare to medium-rare.

Push steaks to the side of the skillet. Crack eggs into the empty space and fry until whites set but yolks jiggle, about 3 minutes.

Toss salad greens with lime juice and a pinch of salt. Plate steak, egg, fries, and salad. Drizzle chili sauce over everything.
