Ingredients

  • ½ cup sour cream
  • 2 tbsp mayonnaise
  • ½ tsp smoked paprika
  • ¾ lb large shrimp, peeled & deveined
  • 1.5 tbsp Cajun seasoning blend
  • 2 cups coleslaw mix (shredded cabbage + carrot)
  • 2 tbsp lime juice
  • 4 count corn tortillas (6-inch)

    Mix sour cream, mayo, and smoked paprika in a small bowl. Season with salt and pepper.

    Toss shrimp with Cajun seasoning, coating all sides evenly.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add shrimp in a single layer and sear 90 seconds per side without stirring. Stop when opaque.

    Toss coleslaw with lime juice and a pinch of salt until slightly wilted, about 1 minute.

    Warm tortillas in the skillet 20 seconds per side. Fill with shrimp, slaw, crema. Serve with lime.
