Ingredients

  • 12 cookies (about 3 oz) Biscoff cookies
  • 3 tbsp butter, melted
  • 16 oz cream cheese, softened
  • ½ cup Biscoff cookie butter (spread)
  • ¼ cup powdered sugar
  • ½ cup heavy whipping cream

Instructions

    Crush Biscoff cookies into fine crumbs, then mix with melted butter until resembles wet sand.

    Press mixture firmly into the bottom of an 8x8-inch baking dish. Use a flat measuring cup to compress evenly.

    Beat cream cheese and powdered sugar until smooth. Fold in half the cookie butter until marbled, not fully mixed.

    Whip heavy cream until soft peaks form, then fold gently into the cheese mixture until light and fluffy.

    Spread filling over crust. Drizzle remaining cookie butter on top and swirl with a knife.

    Chill at least 2 hours, then slice into bars and serve cold.
