Ingredients

  • ½ lb ground beef
  • 12 leaves fresh betel leaves
  • 3 tbsp fish sauce
  • 1 whole lime
  • 1 whole shallot, minced
  • 2 tbsp lemongrass, minced
  • 1 whole red chili, sliced thin

Instructions

    Mix ground beef, shallot, lemongrass, fish sauce, and a pinch of salt in a bowl until just combined.

    Divide beef into 12 portions. Place one portion on the center of each betel leaf, then fold leaf over and roll tightly.

    Heat a skillet or grill pan over medium-high until it shimmers. Working in batches, sear rolls seam-side down until a deep crust forms, ~2 minutes per side.

    Whisk fish sauce, lime juice, sliced chili, and 2 tbsp water in a small bowl to make dipping sauce.
