Berry Parfait with Blueberries and Mint

Ingredients
- 2 cups mixed berries (fresh or frozen)
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 cup plain yogurt
- 1 tbsp honey
- 1 cup blueberries
- 6 leaves fresh mint leaves

In a small saucepan, combine the 2 cups mixed berries, 2 tbsp sugar, and 1 tsp lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 8-10 minutes. The puree should coat the back of a spoon.

Remove the puree from heat and let it cool for 5 minutes. If you prefer a smooth texture, press it through a fine mesh strainer to remove seeds.

In a small bowl, stir together the 1 cup plain yogurt and 1 tbsp honey until well combined.

Spoon 2 tbsp of the berry puree into the bottom of each of 2 glasses. Top with 2 tbsp of the honey yogurt, spreading it gently.

Add another layer of puree, then yogurt, finishing with a layer of puree on top. Use about half the puree and yogurt for each glass.

Scatter the 1 cup blueberries over the top of each parfait, dividing evenly.

Garnish each parfait with 3 fresh mint leaves. Serve immediately or chill for up to 2 hours before serving.
