Ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1.25 cups milk
  • 1 large egg
  • 3 tablespoons butter
  • 2 cups mixed berries (strawberries, blackberries, raspberries)
  • ½ cup maple syrup

Instructions

    In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. In another bowl, beat the 1 egg with 1.25 cups milk and 2 tbsp melted butter.

    Pour the wet ingredients into the dry and stir until just combined; the batter should be lumpy. Let it rest for 5 minutes while you heat a griddle or large skillet over medium heat.

    Melt 1 tbsp butter on the hot griddle. Pour 1/4 cup batter per pancake, cooking 2-3 at a time without crowding. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.

    Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes. Transfer to a plate and repeat with the remaining batter, adding more butter if needed.

    Slice the strawberries and halve any large blackberries. Stack the pancakes on plates, top with the 2 cups mixed berries, and drizzle with the 0.5 cup maple syrup.
