Ingredients

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • ½ cup vegetable oil
  • 1 large egg
  • 1.5 cups mixed berries

    Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners.

    In a large bowl, whisk together 2 cups flour, 3/4 cup sugar, 2 tsp baking powder, and 1/2 tsp salt.

    In a small bowl, beat 1 egg, then stir in 3/4 cup milk and 1/2 cup vegetable oil until combined.

    Pour the wet mixture into the dry ingredients and stir with a spatula just until no dry streaks remain—batter will be lumpy. Gently fold in 1.5 cups mixed berries.
