Ingredients
- 4 cups mixed berries (fresh or frozen)
- 1 cup water
- ¾ cup granulated sugar
- 2 tbsp lemon juice
- ¼ cup fresh mint leaves

In a medium saucepan, combine 1 cup water and 0.75 cup sugar. Bring to a boil over medium-high, stirring until sugar dissolves, about 3 minutes. Remove from heat and let cool slightly.

In a blender, puree 4 cups berries with the sugar syrup and 2 tbsp lemon juice until smooth, about 1 minute.

Strain the puree through a fine-mesh sieve into a 9x13 inch baking dish, pressing with a spatula to extract as much liquid as possible. Discard solids.

Place the dish in the freezer, uncovered. Freeze for 1 hour, then use a fork to scrape and stir the mixture, breaking up any ice crystals.

Continue freezing and scraping every 30 minutes for 2 to 3 hours, until the mixture is fully frozen and forms fluffy, icy crystals.

Scrape the granita into chilled glasses or bowls. Garnish with fresh mint leaves and extra blueberries if desired. Serve immediately.
