Beef with Mashed Potatoes and Peppers

Ingredients
- 1 lb ground beef
- 1 large yellow bell pepper
- 1.5 lb potatoes
- ½ cup milk
- 2 tbsp butter
- 2 cups mixed greens
- 1 tbsp olive oil
- 1 tsp salt

Peel and chop the 1.5 lb potatoes into 1-inch cubes. Place in a pot, cover with cold water, add 1 tsp salt, and bring to a boil. Cook until fork-tender, about 15 minutes.

While potatoes cook, heat 1 tbsp olive oil in a large skillet over medium-high. Add 1 lb ground beef and cook, breaking it up, until browned and no longer pink, about 8 minutes. Season with salt and pepper to taste.

Slice the 1 large yellow bell pepper into thin strips. Add to the skillet with the beef and cook until softened, about 4 minutes. Keep warm.

Drain the potatoes and return to the pot. Add 2 tbsp butter and 0.5 cup milk. Mash until smooth and creamy. Season with salt to taste.

Divide the 2 cups mixed greens between two plates. Spoon the mashed potatoes over the greens, then top with the beef and pepper mixture. Serve hot.
