Ingredients
- 1 lb steak
- 1.5 lb potatoes
- ¼ cup mayonnaise
- 1 tbsp white vinegar
- 2 tbsp vegetable oil
- ¼ cup parsley
Instructions
- 1
Cut the 1.5 lb potatoes into 1/2-inch cubes. Boil in salted water until fork-tender, about 10 minutes. Drain and let cool slightly.

While potatoes cook, season the 1 lb steak with salt and pepper. Heat 1 tbsp of the vegetable oil in a grill pan or skillet over high heat. Cook steak 3-4 minutes per side for medium-rare, until browned and internal temperature reaches 130°F.

In a bowl, whisk the 1/4 cup mayonnaise, 1 tbsp vinegar, and remaining 1 tbsp oil. Toss with the warm potatoes and 1/4 cup chopped parsley. Season with salt and pepper.
- 4
Remove steak from pan and let rest for 5 minutes. Slice thinly against the grain.
- 5
Serve the sliced steak with the potato salad and a side of crispy french fries (store-bought or homemade).
