Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 medium eggplant, cut into chunks
- 1 large bell pepper, sliced
- 1 medium onion, sliced
- 3 tbsp soy sauce
- 2 tbsp vegetable oil

Heat 1 tbsp vegetable oil in a large skillet over high heat. Add the 1 lb beef slices in a single layer and sear until browned, about 2-3 minutes per side. Remove beef and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the 1 medium eggplant chunks and cook, stirring occasionally, until they start to soften and brown, about 4-5 minutes.

Add the 1 large bell pepper and 1 medium onion to the skillet. Cook, stirring, until the vegetables are tender-crisp, about 3-4 minutes.

Return the beef to the skillet. Pour in the 3 tbsp soy sauce and stir everything together until the sauce coats the beef and vegetables, about 1-2 minutes. Serve hot.
