Ingredients
- 6 oz soba noodles
- 8 oz beef sirloin, thinly sliced
- 3 stalks green onions, chopped
- 4 oz tofu, cubed
- 3 tbsp soy sauce
- 4 cups beef broth

Cook the 6 oz soba noodles in boiling water until tender, about 5 minutes. Drain and set aside.

In a pot, bring 4 cups beef broth and 3 tbsp soy sauce to a simmer over medium heat. Add the 4 oz cubed tofu and cook for 3 minutes.

Add the 8 oz sliced beef to the broth and simmer until just cooked through, about 2 minutes. The beef should be pink in the center.
