- 1 cup cherry tomatoes

Pat the 1 lb beef filet dry and season generously with salt and black pepper. Heat 1 tbsp olive oil in a large skillet over high heat until shimmering.

Sear the beef for 3-4 minutes per side until a deep brown crust forms. Remove to a plate and set aside.

Reduce heat to medium-high. Add the remaining 1 tbsp olive oil, 8 oz sliced mushrooms, and 2 sprigs rosemary. Cook, stirring occasionally, until mushrooms are golden and tender, about 5 minutes.

Add 1 cup halved cherry tomatoes and 0.5 tsp red chili flakes. Cook for 2 minutes, until tomatoes soften slightly.
