Ingredients
- 1 lb ground beef
- 1 medium yellow onion, diced
- 1.5 cups long-grain white rice
- 1 can (15 oz) canned black beans, drained and rinsed
- 2.5 cups beef or chicken broth
- 1 whole lime
- ¼ cup fresh cilantro, chopped

Heat oil in a large skillet over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, about 5 minutes.

Add diced onion to the beef and cook until softened and fragrant, about 2 minutes.

Stir in rice, coating it in the beef drippings, for 1 minute until it smells toasted.

Pour in broth and bring to a boil. Reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed, about 12 minutes.

Stir in black beans and cook uncovered for 1 minute until heated through.
