Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 bell peppers, sliced
- 1 eggplant, cubed
- 1 onion, sliced
- 3 tbsp soy sauce
- 1 tbsp cornstarch
- 3 tbsp vegetable oil
- 2 cloves garlic, minced

In a bowl, toss the 1 lb beef slices with 1 tbsp soy sauce and 1 tbsp cornstarch. Let marinate for 10 minutes.

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and sear until browned, about 2-3 minutes per side. Remove and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the 1 sliced onion and 2 minced garlic cloves, stir-fry until fragrant, about 1 minute.

Add the 1 cubed eggplant and 2 sliced bell peppers. Stir-fry until the vegetables are tender-crisp, about 5-7 minutes.

Return the beef to the skillet. Add the remaining 2 tbsp soy sauce and stir-fry everything together for 1-2 minutes until the sauce coats the ingredients and the beef is heated through.
