Ingredients

  • 1 medium carrots
  • 2 oz daikon radish
  • 3 tbsp rice vinegar
  • 1 12-inch baguette
  • 6 oz cooked pork (head cheese, rotisserie, or Vietnamese cold cuts)
  • 2 tbsp mayonnaise
  • ½ cup fresh cilantro and mint leaves
  • 1 whole jalapeño

Instructions

    Cut carrot and daikon into thin matchsticks with a vegetable peeler or mandoline.

    Toss vegetables with rice vinegar and a pinch of salt. Let sit 10 minutes.

    Slice baguette lengthwise. If stale, warm in a 350°F oven for 3 minutes.

    Spread mayo on both cut sides of the baguette.

    Layer pork, pickled vegetables, cilantro, mint, and jalapeño slices on the bottom half.

    Top with the second half, slice diagonally, and serve immediately.
