Ingredients
- 1 medium carrots
- 2 oz daikon radish
- 3 tbsp rice vinegar
- 1 12-inch baguette
- 6 oz cooked pork (head cheese, rotisserie, or Vietnamese cold cuts)
- 2 tbsp mayonnaise
- ½ cup fresh cilantro and mint leaves
- 1 whole jalapeño

Cut carrot and daikon into thin matchsticks with a vegetable peeler or mandoline.

Toss vegetables with rice vinegar and a pinch of salt. Let sit 10 minutes.

Slice baguette lengthwise. If stale, warm in a 350°F oven for 3 minutes.

Spread mayo on both cut sides of the baguette.
