Ingredients

  • 12 oz chicken breast
  • 1 small (8 inches) baguette
  • 3 tbsp mayo
  • 2 tbsp rice vinegar
  • 1 cup total carrots (shredded) and cucumber (sliced)
  • ½ cup fresh cilantro and jalapeño, sliced

Instructions

    Toss carrots and cucumber with rice vinegar, salt, and pepper. Let sit while you cook the chicken.

    Pound chicken to 3/4-inch thickness. Season generously with salt and black pepper on both sides.

    Heat oil in a large skillet over medium-high until it shimmers. Sear chicken 5–6 minutes per side until golden and cooked through.

    Transfer chicken to a cutting board and slice into strips.

    Halve the baguette lengthwise. Spread mayo on both cut sides.

    Layer chicken, pickled veggies, cilantro, and jalapeño on one half. Top with the other half and serve.
