Ingredients
- 12 oz chicken breast
- 1 small (8 inches) baguette
- 3 tbsp mayo
- 2 tbsp rice vinegar
- 1 cup total carrots (shredded) and cucumber (sliced)
- ½ cup fresh cilantro and jalapeño, sliced

Toss carrots and cucumber with rice vinegar, salt, and pepper. Let sit while you cook the chicken.

Pound chicken to 3/4-inch thickness. Season generously with salt and black pepper on both sides.

Heat oil in a large skillet over medium-high until it shimmers. Sear chicken 5–6 minutes per side until golden and cooked through.

Transfer chicken to a cutting board and slice into strips.

Halve the baguette lengthwise. Spread mayo on both cut sides.
