Ingredients
- 1.5 lb pork shoulder or butt, cut into 1.5-inch cubes
- ¾ lb pork or beef sausages, cut into 1-inch chunks
- 1.5 tbsp smoked paprika
- 4 cloves garlic, minced
- 1 whole lemon (juiced + zested)
- 1 medium onion, cut into 1-inch chunks
- 2 tbsp fresh thyme or oregano, chopped
- 3 tbsp olive oil

Thread pork cubes and sausage chunks alternating onto metal skewers, spacing pieces 1/4 inch apart.

In a small bowl, whisk paprika, minced garlic, lemon zest, thyme, olive oil, salt, and pepper until paste-like.

Brush the paprika mixture over all sides of the skewered meat, coating generously.

Heat a 14-inch cast iron skillet over high heat until smoking, about 2 minutes.

Sear skewers 2–3 minutes per side without moving, until edges char deep brown and pork reaches 160°F internally.
