Ingredients
- ½ lb ground beef
- ½ lb ground pork
- 1 large yellow onion
- ½ cup sour cream or kajmak (Balkan dairy)
- 2 count burger buns
- ½ tsp paprika (smoked, optional)
- 2 tbsp fresh parsley, chopped
Instructions
- 1
Thinly slice the onion. Heat oil in a large skillet over medium, then cook onions, stirring often, until deep golden brown, ~10 minutes. Set aside.
- 2
Combine beef and pork in a bowl with salt, pepper, and paprika. Form into 2 thick, loose patties (don't overwork; they should feel tender).
- 3
Increase heat to medium-high. When the skillet is hot, press patties into the pan. Sear 3 minutes per side without moving until a deep brown crust forms.
- 4
Toast the buns cut-side down in the same skillet for 30 seconds until golden.
- 5
Spread sour cream on the bottom bun. Top with patty, caramelized onions, parsley, and a second dollop of sour cream. Close the bun.
- 6
Serve immediately while the patty is still hot and the bun is warm.
