Ingredients
- 1 lb ground beef (80/20)
- ¼ cup kajmak or sour cream
- 3 oz sharp cheddar or kashkaval cheese
- ¼ medium, minced onion
- ½ tsp smoked paprika

Mix ground beef with onion, paprika, salt, and pepper until just combined — don't overwork.

Divide meat into 4 equal balls. Flatten 2 into thin disks about 0.25 inches thick.

Top one disk with 2 tbsp kajmak and 1.5 oz cheese, leaving a 0.5-inch border. Place second disk on top and press edges to seal.

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Slide patties into the skillet and cook 4–5 minutes per side without moving until edges crisp and cheese peeks out.
