Ingredients

  • 2 medium zucchini
  • 1 cup breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. 2

Slice the 2 medium zucchini into 1/4-inch thick rounds. Pat them dry with a paper towel to remove excess moisture.

  3. 3

In a shallow bowl, mix 1 cup breadcrumbs, 1/2 cup grated parmesan, 1 teaspoon paprika, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

  4. 4

Brush each zucchini slice with the 2 tablespoons olive oil, then press both sides into the breadcrumb mixture until evenly coated.

  5. 5

Arrange the coated slices in a single layer on the prepared baking sheet. Bake until golden and crispy, about 20-25 minutes, flipping halfway through.

  6. 6

Serve hot, with marinara sauce or a squeeze of lemon if desired.
