Ingredients

  • 4 slices bacon
  • 1 medium onion
  • 1 cup rice
  • 1 cup frozen peas and carrots
  • ½ pound shrimp
  • 1 pound clams and mussels

Instructions

    Preheat oven to 400°F. In an oven-safe skillet, cook 4 slices chopped bacon over medium until crisp, about 6 minutes. Remove bacon, leaving 2 tbsp drippings.

    Add 1 chopped onion to the skillet and cook until soft, about 4 minutes. Stir in 1 cup rice and 2 cups water, scraping up browned bits. Bring to a simmer.

    Stir in 1 cup frozen peas and carrots, 0.5 pound peeled shrimp, and the cooked bacon. Nestle 1 pound clams and mussels into the rice.

    Cover the skillet and bake until rice is tender and shellfish have opened, about 15 minutes. Discard any unopened shells before serving.
