- 2 large russet potatoes
- 4 slices bacon
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp sour cream
- 1 tbsp chopped chives

Preheat oven to 400°F (200°C). Scrub the 2 potatoes and prick each several times with a fork. Place directly on the oven rack and bake until tender when squeezed, about 50-60 minutes.

While potatoes bake, cook the 4 bacon slices in a skillet over medium heat until crisp, about 6-8 minutes. Drain on paper towels, then crumble into bits.

When potatoes are done, let them cool for 5 minutes. Cut a slit lengthwise in each, then fluff the insides with a fork.

Add 1 tbsp butter and a pinch of salt and pepper to each potato, mixing into the fluffed flesh.

Top each potato with 1/2 cup shredded cheddar and the crumbled bacon. Return to the oven (or broil) for 2-3 minutes until the cheese melts.
