Ingredients
- 4 fillets white fish fillets
- 1 whole lemon
- ¼ cup chopped fresh dill
- ½ cup plain yogurt
- 4 rolls bread rolls
- 1 cup shredded cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
Instructions
- 1
Preheat the oven to 400°F. Pat the 4 fish fillets dry and season both sides with the 1 tsp salt and a few grinds of black pepper.
- 2
Place the fillets in a lightly oiled baking dish. Drizzle with 1 tbsp of the olive oil and bake for 12-15 minutes, until the fish flakes easily with a fork.
- 3
While the fish bakes, mix the 0.5 cup yogurt, juice of the 1 lemon, and 2 tbsp of the chopped dill in a small bowl. Season with a pinch of salt.
- 4
Split the 4 bread rolls and top each with 0.25 cup of the shredded cheese. Place on a baking sheet and broil for 2-3 minutes, until the cheese is melted and bubbly.
- 5
Remove the fish from the oven and spoon the lemon-dill sauce over the top. Sprinkle with the remaining 2 tbsp dill.
- 6
Serve the fish hot with the cheesy bread rolls and a simple green salad on the side, if you like.
