Ingredients

  • 1 sheet unbaked pie crust (9-inch)
  • 6 slices bacon, chopped
  • 1 cup sharp cheddar, shredded
  • 6 whole large eggs
  • ½ cup heavy cream
  • 2 cups mixed greens for salad

Instructions

  1. 1

Preheat oven to 400°F. Place pie crust in a 9-inch pie dish and prick the bottom with a fork.

  2. 2

Cook bacon in a skillet over medium heat until crispy, about 5 minutes. Chop into bite-size pieces.

  3. 3

Whisk together eggs, cream, salt, and pepper in a bowl until smooth. Stir in bacon and cheddar.

  4. 4

Pour egg mixture into the crust. Bake until the center is just set and the top is golden, about 15 minutes.

  5. 5

Toss mixed greens with a light vinaigrette while the quiche bakes.
