Ingredients
- 8 slices bacon
- 2 large onions
- ½ teaspoon black pepper
Instructions
- 1
Cut the 8 bacon slices crosswise into 1 inch pieces. Place them in a cold 12 inch skillet and set over medium heat.
- 2
Cook the bacon, stirring occasionally, until browned and crisp, about 8-10 minutes. Use a slotted spoon to transfer to a paper towel-lined plate, leaving about 2 tbsp of drippings in the pan.
- 3
While the bacon cooks, peel and slice the 2 large onions into thin half-moons, about 1/4 inch thick.
- 4
Add the sliced onions to the hot drippings in the skillet. Cook over medium heat, stirring often, until soft and golden brown, about 12-15 minutes.
- 5
Return the crispy bacon to the skillet with the onions. Stir in the 1/2 teaspoon black pepper and cook for 1-2 minutes until everything is hot and well combined.
- 6
Serve warm as a side dish or as a topping for potatoes, burgers, or eggs.
