Ingredients

  • 4 whole eggs
  • 1 whole avocado, ripe
  • 4 slices sliced bread
  • 4 whole radishes
  • 8 whole cherry tomatoes
  • ½ whole lemon

Instructions

    Bring a pot of water to a boil. Gently add eggs and cook for 6–7 minutes until whites set but yolks stay jammy.

    While eggs cook, toast the bread until golden and crispy on both sides.

    Halve the avocado, scoop flesh into a bowl, and mash with a fork until chunky-creamy. Season with salt, pepper, and a squeeze of lemon.

    Transfer toasted bread to plates. Spread mashed avocado evenly across each slice.

    Peel cooled eggs, halve them, and arrange on top of the avocado toast.
