Ingredients

  • 2 slices bread, sliced
  • 1 whole avocado
  • 2 whole eggs
  • ½ cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper

    Toast the bread until golden brown, about 2 minutes per side.

    While bread toasts, halve the avocado, remove the pit, and scoop flesh into a bowl.

    Mash the avocado with a fork until chunky-creamy. Season with salt and pepper.

    Heat 1 tbsp olive oil in a skillet over medium-high until it shimmers, about 90 seconds.
