Ingredients
- 1.5 lb strip steak
- 2 links chorizo sausage
- 1 large onion
- 2 tbsp butter
- 1 sprig fresh rosemary
- 1 tsp flaky salt

Preheat a grill or grill pan over high heat. Pat the 1.5 lb steak dry and season both sides with salt and pepper.

Grill the steak for 4-5 minutes per side for medium-rare, until a thermometer reads 130°F. Grill the 2 chorizo links alongside, turning often, until charred and cooked through, about 8 minutes.

While the meat cooks, slice the 1 large onion into thick rings. Grill the rings for 2-3 minutes per side, until softened and lightly charred.
