Ingredients

  • 1.5 lb strip steak
  • 2 links chorizo sausage
  • 1 large onion
  • 2 tbsp butter
  • 1 sprig fresh rosemary
  • 1 tsp flaky salt

Instructions

  1. 1

Preheat a grill or grill pan over high heat. Pat the 1.5 lb steak dry and season both sides with salt and pepper.

  2. 2

Grill the steak for 4-5 minutes per side for medium-rare, until a thermometer reads 130°F. Grill the 2 chorizo links alongside, turning often, until charred and cooked through, about 8 minutes.

  3. 3

While the meat cooks, slice the 1 large onion into thick rings. Grill the rings for 2-3 minutes per side, until softened and lightly charred.

  4. 4

Rest the steak and sausage for 5 minutes, then slice the steak against the grain. Arrange on a platter with the sausage and onions.

  5. 5

Top with the 2 tbsp butter, 1 sprig rosemary, and 1 tsp flaky salt. Serve hot.
