Ingredients

  • 2 pounds beef short ribs
  • 1.5 pounds potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons coarse salt
  • 1 teaspoon black pepper
  • ¼ cup fresh parsley
  • 1 tablespoon fresh oregano
  • 2 cloves garlic

Instructions

    Season short ribs generously with salt and pepper; let sit at room temperature for 30 minutes.

    Preheat grill to medium-high heat and place ribs bone-side down; grill for 6-8 minutes per side.

    Meanwhile, cut potatoes into wedges, toss with olive oil, salt, and pepper; roast at 425°F for 25-30 minutes.
