Ingredients
- 1 sheet (about 10x10 inch) puff pastry sheet
- 4 tbsp apricot jam
- 2 medium fresh apricots
- 1 large egg
- 1 tsp granulated sugar

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll the 1 puff pastry sheet slightly to smooth it. Cut it into 4 equal squares.

Place 1 tbsp apricot jam and a few thin slices from 1 fresh apricot in the center of each square. Fold each square diagonally to form a triangle, pressing edges with a fork to seal.

Beat the 1 egg in a small bowl. Brush the tops of the turnovers with the egg wash, then sprinkle with the 1 tsp sugar.

Bake for 15-18 minutes, until the pastry is puffed and golden brown. Let cool for 5 minutes before serving.
