Ingredients

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 1.5 tsp ground cumin
  • 1 tsp paprika
  • 3 tbsp lemon juice (about 2 lemons)
  • ¼ cup tahini
  • ½ medium small red onion, sliced thin
  • 4 pieces pita or flatbread

Instructions

    Toss beef with cumin, paprika, 1 tbsp lemon juice, 0.5 tsp salt, and black pepper.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Working in batches, sear beef 2–3 minutes per batch without stirring until edges brown and curl.

    Toss red onion slices with remaining 2 tbsp lemon juice and a pinch of salt; set aside.

    Whisk tahini with 2 tbsp water, 1 clove minced garlic, and salt until pourable.

    Warm pita in a dry skillet 30 seconds per side, then fill with beef, pickled onion, and tahini sauce.
