Ingredients
- 1 lb beef sirloin or flank steak, thinly sliced
- ¼ cup tahini
- 1 whole lemon (juiced)
- 1.5 tsp cumin
- 1 tsp paprika
- 4 whole pita bread
- 2 cups diced tomato and quick-pickled cucumber, for serving

Toss beef with 2 tbsp lemon juice, cumin, paprika, 0.5 tsp salt, and black pepper. Let sit 5 minutes.

Heat 1 tbsp oil in a large skillet over medium-high until it shimmers. Working in batches, sear beef 90 seconds per side until edges brown.

Whisk tahini with 2 tbsp warm water, 1 tbsp lemon juice, and a pinch of salt until pourable. Drizzle into a small bowl.

Warm pita in the same skillet or over a flame 30 seconds per side until puffed.

Spread tahini sauce inside each pita. Layer warm beef, tomato, and pickled cucumber. Serve immediately.
