Ingredients
- 2 links (about 10 oz total) beef boerewors sausages
- 1 medium white onion
- 2 count soft white rolls
- 2 tbsp hot sauce or chili paste
- ¼ cup, chopped fresh cilantro or parsley
- ½ count lemon or lime
- 1 tbsp olive oil

Slice the onion into 1/4-inch-thick rounds. Heat oil in a skillet over medium-high until shimmering, about 1 minute.

Add onion slices and cook, stirring occasionally, until edges char and soften, about 6 minutes. Transfer to a plate.

In the same skillet, sear the boerewors over medium-high for 3–4 minutes per side until deep brown and sizzling. They're done when a fork pierces easily.

Toast the rolls cut-side down in the skillet for 30 seconds until golden. Squeeze hot sauce onto each roll.

Nestle one sausage into each roll. Top with charred onions and fresh cilantro. Squeeze fresh lemon juice over the top.
