Ingredients

  • 2 links (about 10 oz total) beef boerewors sausages
  • 1 medium white onion
  • 2 count soft white rolls
  • 2 tbsp hot sauce or chili paste
  • ¼ cup, chopped fresh cilantro or parsley
  • ½ count lemon or lime
  • 1 tbsp olive oil

Instructions

  1. 1

Slice the onion into 1/4-inch-thick rounds. Heat oil in a skillet over medium-high until shimmering, about 1 minute.

  2. 2

Add onion slices and cook, stirring occasionally, until edges char and soften, about 6 minutes. Transfer to a plate.

  3. 3

In the same skillet, sear the boerewors over medium-high for 3–4 minutes per side until deep brown and sizzling. They're done when a fork pierces easily.

  4. 4

Toast the rolls cut-side down in the skillet for 30 seconds until golden. Squeeze hot sauce onto each roll.

  5. 5

Nestle one sausage into each roll. Top with charred onions and fresh cilantro. Squeeze fresh lemon juice over the top.
