Ingredients
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp ginger, minced
- 1 clove garlic, minced
- ¼ tsp red pepper flakes
- 12 oz sushi-grade ahi tuna, 1-inch cubes
- 1.5 cups cooked sushi rice, warm
- ½ cup cucumber, thinly sliced
- 2 tbsp sesame seeds (black and white, mixed)

Whisk soy sauce, rice vinegar, sesame oil, ginger, garlic, and pepper flakes in a small bowl.

Add tuna cubes to the marinade. Gently toss to coat evenly. Let sit 5 minutes.

Divide warm rice between two bowls. Press gently to create a flat base.

Top each bowl with marinated tuna and any remaining marinade from the bottom of the bowl.

Arrange cucumber slices around the tuna. Scatter sesame seeds generously over the top.
