Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp ginger, minced
  • ½ tsp sriracha or chili paste
  • 1 tsp sesame oil
  • 1 piece sushi-grade ahi tuna, 8 oz
  • 1.5 cups cooked sushi rice or short-grain rice
  • 1 whole avocado
  • 1 cup mixed cucumber, scallions, and sesame seeds for topping

Instructions

    Whisk soy sauce, rice vinegar, ginger, sriracha, and sesame oil in a small bowl.

    Cut tuna into 1-inch cubes. Add to marinade and toss gently to coat. Let sit 5 minutes.

    Divide warm rice between two bowls. Top each with half the marinated tuna.

    Slice avocado and arrange beside the tuna. Add cucumber slices, sliced scallions, and a pinch of sesame seeds.
