Ingredients
- 1 block (about 14 oz) acorn jelly (dotorimuk)
- 1 medium carrot
- 3 stalks green onions
- ½ cup, chopped fresh parsley or cilantro
- 1 tbsp toasted sesame seeds
- 1 tsp gochugaru (Korean red chili flakes)
- 2 tbsp soy sauce
- 1 tbsp sesame oil

Slice the 1 block acorn jelly into 1/2-inch thick slices, then cut into bite-sized pieces. Place in a large bowl.

Julienne the 1 carrot into thin matchsticks and thinly slice the 3 green onions. Add both to the bowl with the jelly.

Add the 1/2 cup chopped parsley or cilantro, 1 tbsp sesame seeds, and 1 tsp gochugaru to the bowl.

In a small bowl, whisk together the 2 tbsp soy sauce and 1 tbsp sesame oil until combined.

Pour the dressing over the salad and gently toss everything together until the jelly is evenly coated. Serve immediately or chill for 10 minutes before serving.
