Ingredients
- 1 100g pack frozen acai pack (unsweetened)
- ½ cup non-dairy milk (almond or coconut)
- ½ banana, sliced
- ½ cup granola (store-bought or homemade)
- ½ cup fresh berries (blueberries, strawberries, or raspberries)
- 2 tablespoons unsweetened shredded coconut
- 2 tablespoons raw almonds, roughly chopped
Instructions
- 1
Run warm water over the frozen acai pack for 30 seconds to soften the edges just slightly, then cut open the wrapper and scoop the acai into a blender.
- 2
Pour in 0.5 cup of non-dairy milk and add the banana slices.
- 3
Blend on high until the mixture is completely smooth and creamy with no lumps, about 30 to 45 seconds.
- 4
Pour the acai blend into a bowl, spreading it into an even layer about 0.75 inches thick on the bottom.
- 5
Arrange the banana slices in a row along the top surface of the acai blend.
- 6
Scatter the fresh berries in a cluster on the acai, leaving some empty space visible between them.
- 7
Sprinkle the granola evenly across the surface, covering roughly half the bowl and leaving some acai visible.
- 8
Sprinkle the shredded coconut and chopped almonds over the granola and berries in small clusters.
- 9
Eat immediately with a spoon, scooping from the bottom to get acai, toppings, and fruit in each bite.
