Ingredients

  • 2 packets (100g each) frozen acai packets (unsweetened)
  • 1 medium, sliced frozen banana
  • ½ cup coconut milk or almond milk
  • ½ cup, divided granola (gluten-free if needed)
  • ½ cup, divided fresh strawberries or blueberries
  • ¼ cup, divided unsweetened coconut flakes (shredded)

Instructions

    Place the 2 acai packets, 1 frozen banana slice, and 0.5 cup coconut milk into a blender.

    Blend on high speed until the mixture is completely smooth and thick, like soft-serve ice cream, about 60 seconds.

    Pour the blended acai mixture evenly into 2 bowls, filling each about three-quarters full.

    Sprinkle 0.25 cup granola in a thin layer across the top of the first bowl.

    Scatter 0.25 cup fresh berries in a single layer over the granola in the first bowl.

    Sprinkle 0.125 cup coconut flakes in small clusters on top of the berries in the first bowl.

    Repeat steps 4–6 with the remaining 0.25 cup granola, 0.25 cup berries, and 0.125 cup coconut flakes on the second bowl.

    Serve immediately while the base is still creamy and cold.
