Ingredients
- 8 whole large eggs
- 3 tbsp mayonnaise
- 1 tbsp Dijon mustard
- ½ tbsp white vinegar
- ¼ tsp paprika (plus more for garnish)
- 1 tbsp pickle relish or fresh chives (optional garnish)

Bring a pot of salted water to a boil, gently lower eggs in, and simmer for 10 minutes.

Transfer eggs to an ice bath for 2 minutes, then peel and pat dry.

Slice each egg in half lengthwise and scoop yolks into a small bowl.

Mash yolks with mayo, Dijon, vinegar, paprika, and a pinch of salt and pepper until smooth and creamy.

Spoon or pipe yolk mixture into each egg white cavity, mounding slightly.
