Ingredients

  • 8 whole large eggs
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • ½ tbsp white vinegar
  • ¼ tsp paprika (plus more for garnish)
  • 1 tbsp pickle relish or fresh chives (optional garnish)

Instructions

    Bring a pot of salted water to a boil, gently lower eggs in, and simmer for 10 minutes.

    Transfer eggs to an ice bath for 2 minutes, then peel and pat dry.

    Slice each egg in half lengthwise and scoop yolks into a small bowl.

    Mash yolks with mayo, Dijon, vinegar, paprika, and a pinch of salt and pepper until smooth and creamy.

    Spoon or pipe yolk mixture into each egg white cavity, mounding slightly.

    Dust with paprika and pickle relish or chives. Serve immediately or chill.
