Ingredients

  • 1.5 lbs pork shoulder, cubed
  • 1 can (14.5 oz) canned diced tomatoes
  • 1 can (15 oz) canned chickpeas, drained
  • 1 medium plantain or sweet potato, cubed
  • 2 cups cabbage, chopped
  • 2 cups beef broth
  • 1 tbsp fish sauce

Instructions

    Heat oil in a large pot over medium-high. Add pork cubes and brown, stirring, until no pink shows, ~8 minutes.

    Pour in tomatoes and broth. Stir in fish sauce. Bring to a simmer.

    Add plantain and chickpeas. Simmer 8 minutes until plantain softens slightly.

    Stir in cabbage and simmer 5 minutes until just tender but still bright.

    Taste and adjust salt and pepper. Serve hot in bowls.
