Ingredients

  • 1 lb boneless chicken thighs, cubed
  • 6 oz Filipino sausage (longaniza), sliced into coins
  • 1 can (14.5 oz) canned diced tomatoes with juice
  • 2 cups chicken broth
  • 12 oz red potatoes, cubed
  • 4 cups cabbage, chopped into bite-sized pieces
  • 1 tbsp fish sauce (patis)

Instructions

    Heat oil in a large pot over medium-high. Add sausage coins and cook 2 minutes until lightly browned.

    Add chicken cubes to the pot. Brown for 3 minutes, stirring occasionally, until edges turn opaque.

    Pour in tomatoes with juice and broth. Add potato cubes and fish sauce, then stir to combine.

    Bring to a boil, then reduce heat to medium. Simmer for 8 minutes until potatoes are almost tender.

    Stir in chopped cabbage. Simmer 3 more minutes until cabbage wilts but still has a slight bite.

    Taste and adjust salt with additional fish sauce or regular salt. Serve in bowls with broth.
