Ingredients
- 1 lb pork belly or shoulder, cubed into 1.5-inch pieces
- 3 tbsp soy sauce
- 2 tbsp mirin or honey
- ½ cup sake or water
- 1 tbsp ginger, sliced into thin coins
- 1 stalk scallion, chopped (optional garnish)

Add 1 tbsp oil to a pressure cooker on high heat. Brown pork cubes in batches, 90 seconds per side, until golden. Set aside.

Pour soy sauce, mirin, sake, and ginger into the cooker. Scrape the browned bits from the bottom.

Return pork to the cooker, submerge in liquid. Lock the lid and pressurize on high for 8 minutes.

Quick-release pressure. Transfer pork to a bowl. Simmer the sauce uncovered for 2 minutes until syrupy.
