Ingredients

  • 1.5 cups all-purpose flour
  • 6 tbsp butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 10 oz plums (fresh, ripe)
  • 1.5 tsp baking powder

Instructions

    Preheat oven to 400°F. Mix flour, baking powder, and a pinch of salt in a bowl.

    Cream butter and sugar until fluffy, ~2 minutes. Beat in the egg until combined.

    Fold flour mixture into butter mixture until no streaks remain. Spread on a parchment-lined 9x13 sheet pan.

    Halve the plums and remove pits. Arrange plum halves skin-side up across the batter, pressing gently.
