Ingredients

  • 2 shots (1.5 oz each) espresso
  • 10 oz whole milk (cold)
  • 2 tbsp water (for steaming, optional)

Instructions

  1. 1

Pull two shots of espresso into a warm 8–10 oz cup.

  2. 2

Pour cold whole milk into a metal pitcher, filling to about 1 inch below the rim.

  3. 3

Submerge a steam wand or frother tip 1/4 inch below the surface of the milk. Turn heat to medium-high.

  4. 4

Steam until milk is hot and foamy, about 60 seconds. You should hear a soft hiss and feel the pitcher get too hot to touch.

  5. 5

Tap the pitcher on the counter to break large bubbles and swirl gently to create a glossy microfoam.

  6. 6

Pour steamed milk into the espresso, holding back foam with a spoon. Top with a thin layer of microfoam and serve immediately.

Tools you’ll need

  • espresso machine or Moka pot
  • 8–10 oz ceramic or glass cup
  • metal milk pitcher (12–20 oz)
