Ingredients

  • 2 cups cooked jasmine rice, chilled
  • 1 cup fresh pineapple, cut into 0.5-inch chunks
  • 2 tbsp soy sauce
  • ½ cup roasted cashews, chopped
  • 3 stalks green onion, sliced into 1-inch pieces
  • 2 tbsp neutral cooking oil

  1. 1

Heat oil in a 12-inch skillet over medium-high heat until it shimmers, about 90 seconds.

  2. 2

Add the chilled rice, breaking up clumps with a wooden spoon. Toss constantly for 2 minutes until the rice is heated through.

  3. 3

Pour in soy sauce and toss to coat evenly. Add pineapple chunks and cashews, stirring for 1 minute until fragrant.

  4. 4
