Ingredients

  • 2 lbs pork spare ribs, cut into 2-inch pieces
  • 5 tbsp soy sauce
  • 3 tbsp granulated sugar
  • 1 tbsp fresh ginger, minced
  • 2 whole star anise
  • 2 tbsp rice vinegar
  • 3 whole scallions, sliced into 1-inch pieces

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Working in batches if needed, sear ribs without moving until edges are golden brown, 3–4 minutes per side.

    Return all ribs to the skillet. Stir in soy sauce, sugar, ginger, star anise, vinegar, and 1/2 cup water.

    Bring to a simmer, then reduce heat to medium-low and cover. Braise for 12–14 minutes, stirring once halfway through.

    Uncover and increase heat to medium-high. Cook uncovered for 2–3 minutes, stirring gently, until the sauce thickens and coats the ribs.

    Remove from heat. Discard star anise. Garnish with sliced scallions and serve hot.
