- 8 oz rice noodles
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 3 cloves garlic
- 2 cups cabbage
- 3 stalks scallions
- ¼ cup cilantro
- 2 tbsp vegetable oil

Cook the 8 oz rice noodles according to package directions until just tender, about 5-7 minutes. Drain and rinse with cold water to stop cooking; set aside.

In a small bowl, whisk together the 3 tbsp peanut butter, 2 tbsp soy sauce, and 3 tbsp water until smooth. Set aside.

Mince the 3 garlic cloves and thinly slice the 3 scallions, separating white and green parts. Shred the 2 cups cabbage into thin strips.

Heat the 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the garlic and white parts of scallions; stir-fry until fragrant, about 30 seconds.
